The Healthy Plate: March 2010

The Healthy Plate: March 2010

For the last few weeks, I''ve been cleansing and cleaning, inside and out, in body and feelings......A shower of juices, a scrubbing with nuts,

a soaking in smoothies, restoring my gut......

Shiny and glowing, my skin sings a song,

eyes are bright and clear, all day long.....

Getting ready for spring, for flowers to bloom,

to dance and swirl, in every corner and room..... Juices :Ruby red Oranges + GingerCarrot + Ginger + LemonCucumber + Pear + MintCelery + Apple + Lime Salad :Avocado, cherry tomatoes, greens, hemp seeds, walnuts and raisins Salad Dressing :Juice of 1 OrangeJuice of half a Lime1 heaped teaspoon Tahini1 heaped teaspoon Hemp seedssea salt, cayenne pepper to tastea drizzle of Honey or AgaveBlend all the above ingredients till smooth.....This dressing was so tasty that I could have had it allon its own, forget the salad!! :-) Raw Zucchini Pasta :Not zucchini with pasta, but zucchini as pasta :-)Peel the zucchini with a peelerand then continue peelingand you will get thin tagliatellikind of shaved zucchini.I eat this with Raw Pestoand cherry tomatoes..... Raw Vegan Pesto :Basil, Parsley, Pine nuts, garlic, lemon juice, olive oil, sea salt.Blend, taste, adjust, enjoywith Raw Pasta...... Raw Wraps :These wraps were made using the pulp from the Juices I make every morning. To 1 cup of pulp, I add half a cup of ground flax seeds and 1 tablespoonof raw pesto - mix all togetherwith half a cup of water or so.Spread the mixture in 6" roundswith offset spatula and then dehydrate for an hour, flip and dehydrate for anotherhalf an hour or so.....Filling :cucumber, red pepper, avocadoand cashew cheese cream (cashew nuts, garlic, lemon juice, sea salt, nutritional yeast) Raw Vegetable Pilaf:I used whatever vegetables I had in the fridge - carrots, cauliflower and courgettes - processed them into tiny bits, quite coarse......added garam masala, cumin powder, sea salt, orange zest, finely chopped dates, tamarind, fresh coriander, cashew nuts, olive oil......mixed it alltogether and then warmed in the dehydrator for a coupleof hours - allowing all the flavors to blend together......Oh yes, I also added some carom seeds, in India we call itajwain and it is helps to digest cauliflower :-) Almond, Coconut and Blueberry Cookies :A cup of ground almonds, a cup of dried coconut, 2 teaspoonsof hemp seeds, 1/2 teaspoon of green stevia powder, a handfulof sultanas and a cup of blueberries pulsed in a blender till ithalf mashed and juicy.........add a drizzle of coconut oil and a sprinkle of cayenne pepper then mix it all together.......Make round cookie shapes from this dough and dehydratefor a a couple of hours - flip and dehydrate the other side foranother hour or so and the cookies are ready.....The stevia, sultanas and blueberries were more than enoughto sweeten this cookie and I was very happy to see Trevor enjoying them.....he rarely gets a treat of this kind unless I make it for him with berries and stevia.......He is diabetic and does not eat even naturalsweeteners like honey, agave or dates. Homemade Hazelnut and Cashew Butterwith Cacao and Cayenne pepper My friend Hanane makes this gorgeous flavored Water,

it is a truly brilliant idea - I love it!!!

You can put anything from fruits to herbs, ginger,

lemon and even spices.....Classy for sure :-)And now I make it too, almost every other day! Notes :Raw Food, the what, how, why,the benefits and detox, all of it,is better explained by my friend and fellow blogger Kristen so please visit her over here for more information.
